Ultimate Reset Day 20

Just 1 more day after today! Fresh fruit for break­fast, jicama-avocado salad for lunch (this recipe wasn’t one of my favorite, although I really like jicama now, and I love avo­cado, some­thing about the spices didn’t go well for me), and A PIECE OF WHOLE GRAIN TOAST!!! Omg! That toast was the best toast I have EVER had. I am not much of a bread eater, but I had really missed bread. Din­ner was an asian stir-fry (get­ting tired of stir fry’s by now, but I threw in Napa cab­bage to change it up, it was really good), braised swiss chard (deli­cious!) and brown rice.

Ultimate Reset Day 19

The final week­end of the Reset begins! I have really enjoyed doing this for myself, but at the same time I’m ready to be done. I learned so much, but I really would to add pro­tein back in and get back to my workouts!

I really like my meals today, Fresh fruit for break­fast, Miso soup & Asian cab­bage salad for lunch, and din­ner was baked tem­peh (I’m start­ing to really like tem­peh!), coconut col­lard greens, and brown rice.

Ultimate Reset Day 18

Its been a busy week! Been stick­ing to my diet, the best I can. This morn­ing was fresh fruit for break­fast, roasted cau­li­flower & chick­peas for lunch (I had to pick up lunch today at Whole Foods), lemony aspara­gus & broc­coli and mil­let for din­ner. Din­ner wasn’t my favorite, I’m not a big fan of lemon in my food. But it was okay. These are all the ingre­di­ents I needed to use for dinner:

Ultimate Reset Day 17

Day 17 of the Reset was really good! We had a lot of errands to run, so I had to sub­sti­tute lunch, but that’s okay! We had fresh fruit for break­fast, a avocado/cucumber roll, and a micro­green salad for lunch. I opted for Miso soup for a snack. I was pretty hun­gry today! Din­ner tonight was cur­ried cau­li­flower (it was deli­cious!), lemon-pepper kale, and quinoa.

One thing about my weight, I am down a lit­tle more, and am one pound away from the weight I was when I got mar­ried 10 years ago! So excited :)

Ultimate Reset Day 16

Day 16 of the Ulti­mate Reset was good. I had no crav­ings, and am feel­ing really good! Kids got back to school today, they have been home for 11 days due to Bliz­zard Nemo. It was nice to get back to nor­mal, and to pre­pare my meals a lit­tle eas­ier. Really like din­ner: But­ter­nut squash, green beans and mil­let. I have to say, I’m not sure if I will con­tinue with the mil­let after the reset. It is a lit­tle grainy tast­ing to me. But its okay for now!

Ultimate Reset Day 15

Today is the first day of week 3, the Restore phase. And it also hap­pens to be my birth­day. I have to say, it is a lit­tle bit of a strug­gle hav­ing your birth­day dur­ing the Reset. My kids wanted to take me out to lunch, and they wanted to have cake. I let them have the cake, I’m not sure that they even noticed I didn’t have any. But we did go out to lunch. At first I was wor­ried about what I was going to eat. We chose a local restau­rant, that is more known for its bar food than prob­a­bly any­thing healthy or vegan. Well, I have to say if you take some time to plan BEFORE you go to a restau­rant (and this is true for any diet), see if you can view the menu before you go. A lot of restau­rants have their menus online. If you take some time to look it over before you go, you’ll have a plan already of what you’re going to order. That way when you get there, you won’t be so hun­gry and lose all con­trol, and say “I’ll just start my diet again tomor­row” or “just this once”. I did this before we went out to lunch, and I found some healthy options that I didn’t even know they had.

I opted for a grilled veg­gie sand­wich on a whole grain cia­betta roll. WOW! It was so awe­some. Def­i­nitely some­thing I plan on mak­ing at home. It was called a porta­bello mush­room burger, or some­thing like that. But it was really just porta­bello mush­rooms, baby spinach, and sauteed red pep­pers, with a hum­mus spread. Stayed within my diet guide­lines, and was veg­e­tar­ian too!

Ultimate Reset Day 14

Today is the last day of week #2, tomor­row starts the last week! The last day of the Release, and the last day of the Detox sup­ple­ments. Tomor­row starts the Restore phase. Just 7 more days left. This morn­ing was I was very excited to be down another 1.5 lbs. I am just 2 pounds away from my the weight I was the day I got mar­ried 10 years ago. And I’ve had 4 kids since then (includ­ing one set of twins), all born within 4 years. I have lost close to 30 lbs since start­ing my beach­body jour­ney. And I’m more than 65 lighter than I was the day I deliv­ered my 4th baby just 17 months ago.

Today we had a big bowl of fruit for break­fast, it was so deli­cious and refresh­ing. We bought some more fruit today (we found great prices at Costco on really good fruits!) includ­ing kiwi and blue­ber­ries, I’m really look­ing for­ward to break­fast tomor­row morn­ing. Lunch was tofu and steamed string beans in place of the Kabocha squash that was on the plan. Din­ner was Edamame & Roasted Corn Suc­co­tash and lemon pep­per kale. Delicious!

Ultimate Reset Day 13

Busy day today! We took the kids to a children’s museum and ended up spend­ing a good por­tion of the day there (the kids loved it, there was so much to do! So great when you’ve been snowed in for a week). I packed healthy lunches for the whole fam­ily. Lit­tle more dif­fi­cult to get our Reset food together and bring it to the museum, so I packed up a big bowl of fruit mix for my hus­band and I. When we left the museum, we ended up at Whole Foods and got a cou­ple of pieces of tofu, and a Cal­i­for­nia roll with cucum­ber & avo­cado in whole grain rice. Not really on the plan, but still okay with the guide­lines. Some­times, you just need to make sub­sti­tutes so you can get out and enjoy time with your fam­ily. Din­ner was left­overs Quinoa Lentil Pilaf & Coconut Col­lard Greens. We had made so much of it the night before, we did not want it to go to waste, so we skipped the Kabocha Squash meal.

Ultimate Reset Day 12

Day 12 was great! I’m start­ing to get to the point, where I’m con­cerned about what hap­pens after the reset. I’ve been think­ing a lot more about incor­po­rat­ing a lot of these recipes into nor­mal every­day. And I’m think­ing a lot more about than ever about clean eat­ing. I’ve been clean eat­ing the best I can for almost a year, I read all labels and try to steer clear of any food addi­tives and preser­v­a­tives, GMOs, dyes, etc. But there were still times that I would have some of pack­aged foods out of con­ve­nience. I’ve always loved veg­eta­bles, but they can get a lit­tle bor­ing if you don’t try new recipes. With the reset, I’ve learned so many quick veg­etable recipes, I know that I can cut out even more pack­aged foods and eat even cleaner than before. I love that the Ulti­mate Reset teaches you how to eat, and how to sus­tain this type of lifestyle with­out falling back into old habits.

Todays menu: Fresh fruit for break­fast, Micro­green salad and rice & black beans for lunch, Col­lard greens in coconut milk and Quinoa Lentil Pilaf for din­ner, and I had a Trop­i­cal Straw­berry Vegan Shake­ol­ogy for a mid-afternoon snack. Din­ner was so deli­cious! It was sup­posed to be roasted beets, but I for­got to pick up the beets at the gro­cery store, so I sub­sti­tuted the Quinoa Lentil Pilaf because I had all the ingre­di­ents on-hand. The roasted beets recipes is so deli­cious though, I’m sure I’ll be mak­ing that again soon. I love how easy it is to sub­sti­tute meals with the Ulti­mate Reset!

Ultimate Reset Day 11

Day 11 of the Ulti­mate Reset may be one of the hard­est for me yet. I think its because its Valentine’s Day, and Valentine’s Day just doesn’t feel right with­out choco­lates, and a gourmet din­ner at a restau­rant, or we cook at home. I was crav­ing choco­late and cup­cakes really badly. It didn’t help that we gave our kids some sweets for Valentine’s day. But we did our best to get through the day with­out cheat­ing. Break­fast was fresh fruit, lunch was a micro­green salad, and Miso soup, and din­ner, I replaced the Hearty Miso soup with rice and beans, broc­coli, and steamed swiss chard. The swiss chard was my favorite! I actu­ally grow swiss chard in my gar­den, and never once cooked it because I was just not sure about it, and I loved it! This is def­i­nitely some­thing I’ll be cook­ing again!

I’m not los­ing as much weight as my hus­band. He is now 10 pounds down, I’m still at 6. I did some research and found out that since its a detox diet, and I already eat pretty clean, and don’t have as much to lose, I might not lose as much. I’m okay with that! I just love how I’m feel­ing, no aches, no inflamed feel­ing, no bloat­ing. That all feels really great!
