Just 1 more day after today! Fresh fruit for breakfast, jicama-avocado salad for lunch (this recipe wasn’t one of my favorite, although I really like jicama now, and I love avocado, something about the spices didn’t go well for me), and A PIECE OF WHOLE GRAIN TOAST!!! Omg! That toast was the best toast I have EVER had. I am not much of a bread eater, but I had really missed bread. Dinner was an asian stir-fry (getting tired of stir fry’s by now, but I threw in Napa cabbage to change it up, it was really good), braised swiss chard (delicious!) and brown rice.
The final weekend of the Reset begins! I have really enjoyed doing this for myself, but at the same time I’m ready to be done. I learned so much, but I really would to add protein back in and get back to my workouts!
I really like my meals today, Fresh fruit for breakfast, Miso soup & Asian cabbage salad for lunch, and dinner was baked tempeh (I’m starting to really like tempeh!), coconut collard greens, and brown rice.

Its been a busy week! Been sticking to my diet, the best I can. This morning was fresh fruit for breakfast, roasted cauliflower & chickpeas for lunch (I had to pick up lunch today at Whole Foods), lemony asparagus & broccoli and millet for dinner. Dinner wasn’t my favorite, I’m not a big fan of lemon in my food. But it was okay. These are all the ingredients I needed to use for dinner:
Day 17 of the Reset was really good! We had a lot of errands to run, so I had to substitute lunch, but that’s okay! We had fresh fruit for breakfast, a avocado/cucumber roll, and a microgreen salad for lunch. I opted for Miso soup for a snack. I was pretty hungry today! Dinner tonight was curried cauliflower (it was delicious!), lemon-pepper kale, and quinoa.
One thing about my weight, I am down a little more, and am one pound away from the weight I was when I got married 10 years ago! So excited :)
Day 16 of the Ultimate Reset was good. I had no cravings, and am feeling really good! Kids got back to school today, they have been home for 11 days due to Blizzard Nemo. It was nice to get back to normal, and to prepare my meals a little easier. Really like dinner: Butternut squash, green beans and millet. I have to say, I’m not sure if I will continue with the millet after the reset. It is a little grainy tasting to me. But its okay for now!
Today is the first day of week 3, the Restore phase. And it also happens to be my birthday. I have to say, it is a little bit of a struggle having your birthday during the Reset. My kids wanted to take me out to lunch, and they wanted to have cake. I let them have the cake, I’m not sure that they even noticed I didn’t have any. But we did go out to lunch. At first I was worried about what I was going to eat. We chose a local restaurant, that is more known for its bar food than probably anything healthy or vegan. Well, I have to say if you take some time to plan BEFORE you go to a restaurant (and this is true for any diet), see if you can view the menu before you go. A lot of restaurants have their menus online. If you take some time to look it over before you go, you’ll have a plan already of what you’re going to order. That way when you get there, you won’t be so hungry and lose all control, and say “I’ll just start my diet again tomorrow” or “just this once”. I did this before we went out to lunch, and I found some healthy options that I didn’t even know they had.
I opted for a grilled veggie sandwich on a whole grain ciabetta roll. WOW! It was so awesome. Definitely something I plan on making at home. It was called a portabello mushroom burger, or something like that. But it was really just portabello mushrooms, baby spinach, and sauteed red peppers, with a hummus spread. Stayed within my diet guidelines, and was vegetarian too!
Today is the last day of week #2, tomorrow starts the last week! The last day of the Release, and the last day of the Detox supplements. Tomorrow starts the Restore phase. Just 7 more days left. This morning was I was very excited to be down another 1.5 lbs. I am just 2 pounds away from my the weight I was the day I got married 10 years ago. And I’ve had 4 kids since then (including one set of twins), all born within 4 years. I have lost close to 30 lbs since starting my beachbody journey. And I’m more than 65 lighter than I was the day I delivered my 4th baby just 17 months ago.
Today we had a big bowl of fruit for breakfast, it was so delicious and refreshing. We bought some more fruit today (we found great prices at Costco on really good fruits!) including kiwi and blueberries, I’m really looking forward to breakfast tomorrow morning. Lunch was tofu and steamed string beans in place of the Kabocha squash that was on the plan. Dinner was Edamame & Roasted Corn Succotash and lemon pepper kale. Delicious!
Busy day today! We took the kids to a children’s museum and ended up spending a good portion of the day there (the kids loved it, there was so much to do! So great when you’ve been snowed in for a week). I packed healthy lunches for the whole family. Little more difficult to get our Reset food together and bring it to the museum, so I packed up a big bowl of fruit mix for my husband and I. When we left the museum, we ended up at Whole Foods and got a couple of pieces of tofu, and a California roll with cucumber & avocado in whole grain rice. Not really on the plan, but still okay with the guidelines. Sometimes, you just need to make substitutes so you can get out and enjoy time with your family. Dinner was leftovers Quinoa Lentil Pilaf & Coconut Collard Greens. We had made so much of it the night before, we did not want it to go to waste, so we skipped the Kabocha Squash meal.
Day 12 was great! I’m starting to get to the point, where I’m concerned about what happens after the reset. I’ve been thinking a lot more about incorporating a lot of these recipes into normal everyday. And I’m thinking a lot more about than ever about clean eating. I’ve been clean eating the best I can for almost a year, I read all labels and try to steer clear of any food additives and preservatives, GMOs, dyes, etc. But there were still times that I would have some of packaged foods out of convenience. I’ve always loved vegetables, but they can get a little boring if you don’t try new recipes. With the reset, I’ve learned so many quick vegetable recipes, I know that I can cut out even more packaged foods and eat even cleaner than before. I love that the Ultimate Reset teaches you how to eat, and how to sustain this type of lifestyle without falling back into old habits.
Todays menu: Fresh fruit for breakfast, Microgreen salad and rice & black beans for lunch, Collard greens in coconut milk and Quinoa Lentil Pilaf for dinner, and I had a Tropical Strawberry Vegan Shakeology for a mid-afternoon snack. Dinner was so delicious! It was supposed to be roasted beets, but I forgot to pick up the beets at the grocery store, so I substituted the Quinoa Lentil Pilaf because I had all the ingredients on-hand. The roasted beets recipes is so delicious though, I’m sure I’ll be making that again soon. I love how easy it is to substitute meals with the Ultimate Reset!
Day 11 of the Ultimate Reset may be one of the hardest for me yet. I think its because its Valentine’s Day, and Valentine’s Day just doesn’t feel right without chocolates, and a gourmet dinner at a restaurant, or we cook at home. I was craving chocolate and cupcakes really badly. It didn’t help that we gave our kids some sweets for Valentine’s day. But we did our best to get through the day without cheating. Breakfast was fresh fruit, lunch was a microgreen salad, and Miso soup, and dinner, I replaced the Hearty Miso soup with rice and beans, broccoli, and steamed swiss chard. The swiss chard was my favorite! I actually grow swiss chard in my garden, and never once cooked it because I was just not sure about it, and I loved it! This is definitely something I’ll be cooking again!
I’m not losing as much weight as my husband. He is now 10 pounds down, I’m still at 6. I did some research and found out that since its a detox diet, and I already eat pretty clean, and don’t have as much to lose, I might not lose as much. I’m okay with that! I just love how I’m feeling, no aches, no inflamed feeling, no bloating. That all feels really great!
